L'chappe ('the escape') comes from 25 year old vines on sandy clay gravelly soils over slate. Where Cartelles is aged in stoneware jars for texture and depth, l'chappe is fermented and aged entirely in stainless steel with indigenous yeastpreserving maximum freshness and snap. Certified organic. Six months in tank before bottling.
