His champagne is, of course, made in the usual 'Mthode Champenoise' whereby secondary fermentation takes place in the bottle. What sets Jean Paul's wines apart, however, is the dominance of the Pinot Noir grape in his blends. Whereas most Champagnes are made predominantly from Chardonnay grapes with a little Pinot Noir and Pinot
