Grapes are carefully selected from cool hillside vineyards with unique Kimmeridgian clay limestone soil marls containing small comma shaped limestone oysters. This unique soil type gives the wines their original character and distinctive minerality. The cool night time temperatures help preserve the grapes' acidity. The grape juice is settled
